Take-out Fake-out: California Rolls

Sometimes the best way to get into the water is to accept that it’s going to be cold and dive right in. Other times call for the more gradual dip-your-toes-in-first method. The latter is how I see my husbands experience with sushi (I fall somewhere in between). He’s not a big fan of the raw fish concept but I have the simplicity of the weird-free California rolls to thank for our regular “sushi nights” now.
My husband isn’t the only one in the house with boundary issues when it comes to sushi – I have a few of my own: No visible tentacles, no creatures that previously had tentacles, and no eel. I just haven’t developed those tastes yet or the bravado to acquire them. What I do love is a cold slab of tuna, salmon, or red snapper. Wanna deep fry a Phoenix roll in tempura for me? Sure – go ahead!

Six hours can make all the difference in the world.
The suburbs can be touch-and-go when it comes to eating out at dinner time. I’ve learned that visiting a place at lunch time is no way to gauge how dinner will be there. My husband and I work in the suburbs of Houston – it’s great to live in town and work out, driving against the flow of traffic. The downside is that our favorite “lazy lunch places” up in the ‘burbs seem to disappear around 7:00 each night and morph into total chaos.
We frequented a Tex-Mex restaurant near our workplace for lunch that had a neat atmosphere. We decided to go for dinner one night and oh, my! Loud. Obnoxious. A totally different place – the lazy lunch place was no more. The entertainment worked hard to play over conversation and the shrieks from the kiddies, while the diners worked hard to speak over the music – a viscous cycle. Then there is Locatelli’s Pizza.

Black & White Salsa
No story, just a darn good, super-fresh chunky salsa recipe made without tomatoes. Inspiration for the salsa came from a tapas pre-party that I hosted last month where we served some fun phyllo appetizers and margarita cupcakes. One of the dishes I served was a very vibrant bean and corn salsa. It went great with the theme and had lots of color and lots of flavor. The light dressing really lets the veggies take center stage.
