38 degrees and drizzly. Yuck. That’s what I thought Friday night as I was hanging out in the kitchen (my own little world) making ravioli. I stumbled across Simply Cooking’s blog last week and found a very intriguing recipe for Avocado & Orange salad. I’ve never paired avocado and orange before but I heart avocados – and who doesn’t like oranges?
It didn’t take long. I decided that it was definitely on the menu for next week. I’m dancing around my kitchen making ravioli (I do this alot… dancing, not the ravioli) and the only thing I can think of is the stray avocado in my produce bowl. And the oranges in the fridge. And the walnuts in the freezer. The more I thought about it, the more I wanted to make it, so I rearranged a few things on the menu and went for it. The only thing I didn’t have on hand was Bibb lettuce, so I had to call in a lefty from the bullpen… pre-packaged Romaine.
The salad was fresh, light, and tangy, and one warm breeze away from being a June evening on the back porch. This salad is definitely going to see its share of parties, potlucks, and dinners this year. It just might be my new favorite!
Avocado & Orange Salad (from Simply Cooking)
For the salad, combine:
1 small head Bibb lettuce, torn
1 orange, segmented
1 avocado, cubed
1/2 cup walnuts, toasted and chopped
For the dressing, mix:
1 tbsp. orange juice
1/2 tsp. orange zest
1 tbsp. lemon juice
2 tbsp. walnut oil
plenty of ground pepper
Toss and enjoy!

Although avocados are expensive and difficult to find here, I bought one anyway because I love them soooo much! I’ll be making some variation of this salad tonight and will probably be trying your rosemary bread too! Ciao bella!
