Frito Pie

For those of you to whom March 2nd means a little something, Happy Independence Day. Is there a better way to celebrate than knocking back a cold Shiner and a bowl of Texas Red-topped Frito Pie?

Frito Pie
In a bowl, layer a large handful of Fritos (regular or scoop), a pinch of cheese, couple of ladles of your favorite chili, more cheese, and garnish with sour cream, chopped onions, and if you’re feeling adventurous – or are just glutton for punishment like us – chopped jalapenos. Grab a spoon and a cold Shiner.

I make something very similar to this called Mexican Confetti. I brown the ground beef then place on a table along with Fritos, onions, black olives, shredded cheese, salsa, sour cream, ranch dressing and green olives. Everyone makes their own adding the toppings they choose. It is a lot of fun and taste delicious!

This is a bit similar to Pork bowls- fritos, pulled pork bbq, sour cream, cheddar cheese and then barbeque sauce drizzled on top- super yummy!!!

Jenn – that sounds interesting! I’m going to have to remember that the next time we have pulled pork. It always makes a ton of leftovers.
