Chicken Cheesesteaks with Queso and Pico de Gallo

So… I kind of signed up for a marathon this week.

And by “kind of,” I mean that they have my money and I have a link to a training program. I guess that’s mostly fair.

That program is exactly as long as as I have until “my” marathon. And is supposed to be exactly as long as it takes a normal person to learn how to run 26.2 miles. Only I’m not really normal. But I did run a mile and a half the night before letting my friend talk me into it (but it’s Disney!).

I’m such a sucker. And a newly-crowned Disney addict. (And potentially on my way to divorce court after I tell Jason what I’ve done.)

But it gets me back to The Happiest Place on Earth where I will perform what could be The Most Miserable Activity on Earth for a chance at The Greatest Fitness Accomplishment on Earth.

And there’s no better time to start training for a marathon than in Houston in June.

Chicken Cheesesteaks with Queso and Pico de Gallo

What does all this have to do with that queso-doused sandwich up there? Nothing. I have few rules. Most of them involve how to not make a margarita or leaving lights on when you leave a room (I am now officially my mother). But rules that don’t end with a stay in the pokey are just begging to be broken.

And that’s really why my favorite cheesesteak is made with chicken and not beef. Only now, it comes topped with a generous scoop of queso (not the Wiz) and pico de gallo. And nobody will put me in Dinner Jail when I throw in grilled jalapenos like they used to serve at Texadelphia on Memorial (RIP).

To make that beauty, you need to do three things:
1. Make this chicken cheesesteak sandwich, only forget the cheese and mustard blend.
2. Have leftover queso from the night before.
3. Have a garden that turns out more tomatoes and peppers than you know what to do with… and then make pico de gallo with that.

And just like that, dinner for the next 2 nights is done.

lol, my friend and neighbor picked up running just to do that marathon. I’ve been thinking about doing it myself – seems like a down and dirty way to get cardio done, and I’m down with that. Never have thought of myself as a “runner” though.

I need chicken cheesesteaks in my life…

That is exciting!! I’ve heard great things about the Disney marathon. What a great race for your first marathon :) I also am so ready to make this sandwich for dinner tonight. It looks amazing!

Wow, congratulations!! So excited for you but definitely not envious that you’ll be sweating your tuckus off in Texas June weather! I think I could only do it if someone was in front of me dangling these cheesesteaks on a string… What?! I need an end goal, don’t I?

I’d congratulate you on the marathon, but I don’t know if that is a congratulations type deal. Maybe “best wishes” or “hope you don’t have heat stroke before you make it to Dole Whips” is more appropriate?

HEB (my grocery store) carries them in store-brand.

And I’ve often wondered if there were Georgia- and Tennessee-shaped chips for sale out there somewhere :)

You can do it!! When Shane first started running he was religiously following those training plans and they definitely worked for him. We were SO close to going to Disney for the marathon this winter – we still might in fact. If so, I insist on grabbing a drink with you (post-race of course) ;)

I’ve done the Disney half marathon and can honestly say that you picked a GREAT first marathon!! It is definitely beginner-friendly. And seriously…so.much.fun. I’m so excited for you!!

Made these for dinner last night. Oh my gosh- they were fantastic! :) My husband and I are walking our first marathon in September. Can’t run for anything, but excited to walk the long distance.

Best of luck with your training and the upcoming marathon. I ran one a few years back and started my training in July in Texas and somehow survived. You can do it!!!

just kidding I wish you 26.2 miles of good luck………..you will do well cause we’ll be right there with ya. Me I’m a marathon walker well not marathon half marathon only. Always room for improvement.

Oh the yummy sandwich looks yummy cause I’d eat queso on anything.
