Marinated Beef Kebabs

Do you know Matt Armendariz? You probably do. He’s the super creative and super talented force behind Matt Bites. He’s a fellow Texan. A fabulous photographer. And he just released his cookbook, On a Stick! It’s a fun book full of fun food by a fun guy. Skewered appetizers. Stuck entrees. Impaled desserts. (I should bust out the thesaurus.)

We got the chance to hang with Matt at Food Blog Camp down in Mexico this passed January. His photography session (and Adam’s styling session) were actually the reason we signed up. The baby-free unlimited margaritas, ceviche, and guacamole were just a bonus :) Matt & Adam are great peoples – if you ever get a chance to spend 5 minutes in a room with them, go for it.

On a Stick!

Put food on a stick and people smile. It brings memories of carnivals, county and state fairs, and if you’re a Houstonian: The Rodeo. Back in my pre-Foodie Bride days, I actually snagged a Best Dish with Strawberry Shortcake Kebabs: alternating skewered cubes of angel food cake & strawberries. People went nuts over it! Why? Because it was on a stick.

On a Stick! will be the funnest cookbook that you’ll own. You’ve got your classics, corn dogs and caramel apples, but the real genius is in the unique, creative twists on foods you don’t normally find on a stick: S’mores, Pizza, Cheesecake, Ravioli, Chicken & Waffles, Korean Style Barbecue, and Macaroni & Cheese.

Yes, he put macaroni & cheese on a stick. Fried macaroni & cheese.

Soy-Marinated Beef Skewers with Cilantro-Lime Sour Cream

Ingredients

  • 1/3 cup soy sauce
  • 2 Tbsp dark brown sugar
  • 2 cloves garlic, minced
  • pinch of red pepper flakes
  • Juice and zest of 1/2 an orange
  • 1 lb flank steak cut into 1/2 inch strips
  • Small handful cilantro, chopped, for garnish
  • 1/2 cup light sour cream
  • Juice of 1 lime

Instructions

  1. Whisk soy sauce, brown sugar, garlic, red pepper flakes, and orange juice & zest in a medium bowl.
  2. Add steak, toss and refrigerate until ready to grill.
  3. Heat grill to medium-high.
  4. Grill 4-5 minutes on each side, until nicely browned.
  5. Stir lime juice, sour cream, and half the cilantro together.
  6. Serve skewers over steamed rice, garnished with remaining cilantro, and a dollop of sour cream.

I don’t think it’s available in the US, but in Australia there’s an icecream called Golden Gaytime that tastes like toffee. I’ve grown up with it and love it to bits! I used to chew on the wooden popsticks when the icecream was done… probably why I needed braces…

Now that it is summer-ish, B and I have been making a ton of stick foods! Last week, we made chicken kebabs marinated in soy-citrus and it was fab! Prob my favorite so far.

Then again, I haven’t tried these beef kebabs yet!

Favorite food on a stick? Definitely PINCHOS. This is something they make very often in Puerto Rico, sort of like meat skewers with either chicken or pork. So yummy!

gyros on a stick! I had this at a local county fair a few years ago and haven’t found it since, but it was delicious! Perfect fair food (of course I did have to also carry the tzatziki for dipping, but these were soooooooooooooooooo good! Hands down, the best food on a stick I have ever eaten would be the Greek kabobs served at my hometown’s annual county fair. I always, ALWAYS, had to get at least one (but usually 2… or 3) each day that I visited the fairgrounds. I don’t know if they used lamb or beef or whatever; all I know is that it tasted like little chunks of salty, seasoned goodness!

I’m definitely with you on the classic corndog, but only if it’s fresh from the frier (so basically, at the state fair). My boyfriend takes them one step further by favoring the “breakfast sausage dipped in pancake batter and deep fried” variation.

ahhh!!!! i love corny dogs!!! even though I’m from Dallas and the state fair’s corny dogs are delish, i’ve recently moved to houston and FINALLY got to experience the houston rodeo. Of course I had to get the corny dog there and I can’t believe I’m saying this but it was BETTER than the ones at the texas state fair. Best corn dog of my life!

Oh I love Malaysian satay be it beef, mutton or chicken and it must be accompanied by the delicious satay sauce, cucumber slices, raw onion wedges and plenty of compressed rice cakes to mop up the sauce. I always stuff my face whenever I return home for a visit.

I am a huge food on a stick fan. Every year we go to a festival in Eearl Park Indiana and I get a chicken shish ka bob on a pita with grilled tomatoes, peppers and onions and cucumber sauce. It is amazing!!!

Wow just LOOK at all the Corn dog aficionado’s on here! Many of us are guilty of sneaking to the local Sonic and wallowing in the pleasure a a fresh hot corn dog. Now if I could just learn to make them taste the same at home….
In the mean time I think I’ll just hafta give these Beef Ka-Bobs a whirl. Thanks for sharing!!

I just spent a week learning how to make iced (fancy iced) cookies – on a stick, and not on a stick… just from looking at websites, YouTube and videos/tutorials on websites. So, this week, my favorite “on a stick” food item is cookies. I don’t eat them, but I know a lot of other people who do! Now that I have a storehouse of sticks, maybe I could learn to make other things from this book. I’d love to win it!

Our county fair had zucchini weenies. I was so curious I had to try one. They take a zucchini, hollow out the inside just enough to fit a hot dog (on a stick), then they put it into the corn batter and deep fry it. They serve it with either ketchup, mustard or ranch. I can’t wait for this summer’s fair so I can run to the booth and have my favorite thing on a stick!

There is a lot of things I like on a stick. They are so easy to cook and my kids love them. But I would say that Yakitori would be my favorite!!! It is Japanese food which is just chicken marinaded in sauce and then brush with more sauce. So yummy!!!

Filipino hot dogs and marshmallow on a stick! We would have it during parties when I was younger in the Philippines. Sounds like a weird combination but I loved it! It was delicious!
