Pomegranate Margaritas

You recovered from that turkey & football coma yet? My goodness, that was glorious. And gloriously painful. And if we’re talking about the Texans & Cowboys games, just flat-out glorious.

I wasn’t disowned for healthifying the broccoli & rice casserole. My dad was well enough to be up and about for the day. My cousin Sarah did all of the dishes as we cooked (what a novel idea – and what a saint). And I had exactly enough tequila for a pitcher of Pomegranate Margaritas.

Pomegranate Margaritas

Pomegranates are kind of a pain in the ass to deal with. They’re beautiful. They’re delicious. And they’re high maintenance, kind of like the crawfish of the fruit world.

You have to crack the fruit and dislodge the seeds carefully so you don’t ruin your shirt… all while still impressively ruining a shirt and an apron. That apron has since been known as the Dexter Apron.

But they’re beautiful. And they’re delicious. And it’s fun to put them in salad and on salmon or just eat them by plain by stained hand. And when you leave the hard work to the bottled pomegranate juice companies, they make one heck of a beautiful, delicious margarita.

Pomegranate Margaritas

Pomegranate Margaritas

Pomegranate juice makes the perfect winter margarita.

Ingredients

  • 2 cups homemade margarita mix
  • 1 cup orange juice
  • 1 1/2 cup silver tequila
  • 16 oz bottle 100% pomegranate juice
  • Salt or sugar, for rimming (optional)
  • Lime wedges (optional)
  • Pomegranate seeds (optional)

Instructions

  1. Mix all ingredients in a pitcher.
  2. Pour over ice into salt or sugar-rimmed glasses.
  3. Serve garnished with lime wedges and fresh pomegranate seeds, if desired.

Yields: 8 servings

Orange Margarita

An orange margarita. A Mimosarita? Either way, it’s what happens when you run short on limes and your toddler’s last molar has sucked enough of your will to live to make running to the grocery store seem like being asked to hurdle the Grand Canyon. In a pencil skirt.

But we haven’t been overly dramatic around here lately or anything.

It’s the latest of a long line of flavored margaritas and it’s my duty to warn you, it just might be the smoothest and easiest to drink of all. You simply mix fresh-squeezed orange juice, a little homemade margarita mix, tequila, and orange liqueur.

And it will dull memories of the day’s traumatic hormonal toddler theatrics in half a glass and completely banish them at the bottom of glass #2. Guaranteed.

Orange Margarita

Fresh orange juice and limes makes the perfect mimosa substitute for tequila fans.

Ingredients

  • 6 oz homemade margarita mix
  • 6 oz fresh squeezed orange juice
  • 6 oz silver tequila
  • 4 oz orange liqueur (we love Paula's Orange)
  • Sugar, for rimming glasses (optional)

Instructions

  1. Combine all ingredients in a pitcher or carafe, stirring well.
  2. Run one of the juiced lime or orange halves around the outside edge of the glasses and then dip in sugar.
  3. Fill glasses with ice and pour the margarita over top.

Skinnier Margarita

It’s Friday! And we’re feeling even more celebratory than usual because this morning I got dressed and then immediately took my jeans off.

Without unbuttoning them.

Over the last few months, I’ve been “running,” which is code for “mostly walking between weeks-long hamstring problems” and keeping an eye on calories in vs calories out. Such a rude awakening the first time I punched my daily calories into my phone and saw just how terrible those weekend margaritas actually were. I mean I knew they weren’t great… but times 3? Ouch.

A single lime margarita was an empty calorie bomb with 300+ calories and nearly 40g of sugar. Per glass. And, um, let’s be honest here. I’m pretty sure that I’ve never stopped at just one margarita.

Ever.

Skinnier Margarita

Sure, they’re completely fresh and so much better tasting than any mix you’ll ever find but it is a lot of sugar for something that isn’t frosting. Or doesn’t have frosting on it.

And in it.

So we set out to make a skinny margarita by replacing the sugar in the homemade mix with liquid stevia* and the orange liqueur in the margarita with fresh orange juice. How does that stack up in numbers?

But more importantly, how does it stack up in taste? The skinnier margarita is refreshing, citrusy, and really easy to drink. The orange flavor is brighter and sweetness can easily be adjusted with a couple extra drops of stevia per glass (and I find that it usually needs a couple extra drops but the standard serving amounts are listed below).

And even two of them won’t break your calorie bank or undo all the good you did in the gym earlier today. It’s also a paleo diet friendly if you, like me, have a margarita-loving paleo-following friend.

Skinny Margarita

Save the calories and sugar - this margarita is fresh, homemade, lower-carb, and much skinnier than the original. And bonus! It's Paleo-friendly!

Ingredients

  • 1 cup lime juice
  • 1 cup water
  • 20 drops liquid stevia
  • 6 oz tequila
  • 2 oz fresh-squeezed orange juice
  • Ice
  • Salt for glass rim (optional)

Instructions

  1. To make a pitcher of margaritas, stir all ingredients together and taste for sweetness.
  2. Add additional stevia, if desired.
  3. Serve over ice in salt-rimmed glasses.

*Stevia, agave, and other not-real-sugar sweeteners are either the greatest thing on earth or they’ll kill you, just depends on what you’re reading. Use your preferred not-sugar-sweetener and tweak the recipe to your tastes.

The Blue Margarita

Blue Margarita

I was supposed to have a fantastical ice cream recipe to share today to wrap up the giveaway for National Ice Cream Month but I ended up washing it down the sink. I know it’s difficult to comprehend but it’s true.

There is a such thing as terrible ice cream.

And because I refused to bake my own birthday cake this year, I simply kept with the theme of the (painful) weekend and had a(nother) birthday margarita for “dessert” instead.

There are far worse things in life than bad ice cream and no cake.

Like being hungover at 30-something.

Blue Margarita

This is margarita recipe #427 (16) that you’ll find here on the blog and I think that it’s probably the prettiest.

It seemed fitting (predictable) that a margarita was how we closed the books on my 13th annual (sigh) 21st birthday. A pretty perfect day that included friends, family, and football. And the very last (thank God) of the tequila in the house.

I swapped our favorite orange liqueur (Paula’s) for curacao in our favorite classic lime margarita recipe. Curacao is a blue orange liqueur that lends the margarita its pretty “ocean water” aqua color and unique orange flavor.

No cake? No problem. Birthday wishes can be made over tequila, too.
